Chicken Lettuce Cups with Avocado Salsa

Ingredients

  • 400 g chicken mince
  • 1 1/5 tbsp Keens Curry
  • 1 cup Coriander
  • 1 egg
  • 1/2 cup fresh breadcrumbs
  • 2 tbsp oil
  • 1 ripe avocado, diced
  • 1 tomato, diced
  • 2 spring onions, finely sliced
  • 1 tbsp lime juice
  • Iceberg lettuce to serve

Method

  1. Mix together chicken mince, Keens Traditional Curry Powder, coriander, egg and breadcrumbs in a large bowl. Roll mixture into golf ball size portions.
  2. Heat oil in a large frying pan and fry chicken meatballs on low heat for 12 minutes rolling to cook all over.
  3. While chicken meatballs are frying, mix together avocado, tomato, spring onions and lime juice.
  4. Place chicken meatballs into iceberg lettuce cups and top with a teaspoon of avocado salsa to serve
