Chicken Salad with KEENS Mustard Dressing

Ingredients

  • KEEN’S Mustard Dressing:
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 2 tsp Keens Mustard
  • 1 tsp Dill
  • Black Pepper (Coarse) to taste
  • Salad:
  • 1 small cos lettuce, thickly shredded
  • 1/2 cup spring onions, chopped
  • 3 large Roma tomatoes, thickly sliced
  • 1/2 cup pine nuts, toasted
  • 1 cup feta cheese, crumbled

Method

  1. Whisk together the olive oil, red wine vinegar, KEEN’S Mustard Powder and dill, and allow to stand for 30 minutes. Taste and season with pepper.
  2. Place the cos lettuce, spring onions and tomato slices in a large bowl and toss with half the dressing. Arrange the remaining ingredients on top and drizzle with remaining dressing. Serve immediately.
