Tarragon has slender, dark-green leaves bursting with hints of licorice, mint, and an earthy aroma much like anise. McCORMICK Tarragon's full-bodied flavour is often paired with fish, eggs and vegetables. Tarragon is a key ingredient in the classic Béarnaise sauce, and is also used to make delicious herb butter for vegetables or to flavour roast chicken or a vinaigrette for mixed greens.

Usage Ideas

Tarragon adds hints of mint and licorice to fish, poultry and vegetables. Here are some ideas to get you started.

  • Make a quick sauce for chicken by stirring tarragon into crème fraîche and white wine or adding to a savoury white sauce.
  • Stir a tablespoon of tarragon into a creamy chicken soup.
