Beef and Onion Stew with a Cheese Scone Top

Ingredients

  • 1 tbsp oil
  • 3 onions, sliced
  • 1 kg beef, diced
  • 750ml water
  • 40 g One Pot Beef Herb and Potato Pot Pie
  • 3 cups self raising flour
  • 100 g butter, softened
  • 1 cup parmesan cheese, grated
  • 1 cup cheddar cheese, grated
  • 1 1/4 cups milk

Method

  1. Heat the oil in a large stove top and oven proof dish and fry onions and beef in batches. Place all meat and onions back into the dish.
  2. Add in water and McCORMICK One Pot Beef, Herb and Potato Pot Pie recipe base and bring to a gentle simmer.
  3. Simmer beef for 40 minutes, stirring constantly.
  4. Meanwhile rub the butter into the flour until it has a crumble like texture.
  5. Mix through Parmesan and fold through the milk gently until it forms a sticky dough.
  6. Do not over mix the dough as it will make the scone tough.
  7. Roll the dough out to the size of the casserole dish.
  8. Place the dough on top of the stewed meat and sprinkle with cheddar cheese.
  9. Place in a hot 200c oven for 10-15 minutes or until the scone dough is cooked and cheese is browned.
  10. Serve with steamed greens.
