Mild Chicken Curry

Ingredients

  • 1 kg chicken thigh fillets or drumsticks, skin removed
  • 2 medium onions, peeled and sliced
  • 2 washed potatoes, roughly chopped
  • 40 g Slow Cookers Mild Chicken Curry
  • 400 g (1 can) coconut milk
  • Fresh chopped coriander

Method

  1. Brown chicken and onions then add into slow cooker insert pot with potatoes.
  2. Mix McCormick Slow Cookers recipe basewith coconut milk and pour over chicken and vegetables, stir through.
  3. Cover and cook for 4 hours on HIGH or 8 hours on LOW (Keep covered during cooking. Cooking times may vary between slow cooker models)
  4. Stir through some fresh chopped coriander to serve.

    This is a lovely, fresh recipe but I believe it could be enhanced even more by substituting the 400g can of coconut milk with half and half coconut milk and coconut cream.

    This surprised me as I usually like to make my curry from scratch, but this one tasted just as good, only much easier for those times when I am in a hurry and still want a yummy meal.
