Portuguese BBQ Chicken with Tomato Olive and Cucumber Salad

Ingredients

  • 1 whole chicken, cut in half
  • 1 tbsp oil
  • 40 g Slow Cookers Portuguese Chicken
  • 4 ripe tomatoes, diced
  • 1 cucumber, peeled and diced
  • 50 g black olives
  • 1 lemon, juiced
  • 1/4 cup fresh coriander, chopped

Method

  1. Wash and pat dry the chicken halves. Then rub the oil and McCORMICK Slow Cookers Portuguese Chicken recipe base into the chicken.
  2. Leave to marinate for 1 hour and then BBQ for 1 hour on a medium heat BBQ or bake in a 200oC oven for 45 minutes.
  3. To make the salad: Mix together the tomatoes, cucumber, black olives, lemon juice and coriander.
  4. Leave to marinate for ½ an hour and serve with the BBQ chicken.
