Ingredients
- 1 cup (250mL) water
- 2 cups raisins or sultanas
- 1 cup butter, softened
- 1 1/2 cups brown sugar
- 2 x 60g eggs
- 1 tsp vanilla essence
- 1 tbsp grated orange rind or ½ tsp orange essence
- 2 tbsp McCormick Allspice Ground
- 1 tbsp McCormick Cinnamon Ground
- 3 1/2 cups plain flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp McCormick Adjustable Grinder Sea Salt
Directions
- Preheat oven to 180°C. Line two baking trays with greaseproof paper.
- Bring water to the boil. Add raisins and boil for 2-3 minutes. Reserve water. Let cool.
- Cream butter and sugar. Add eggs, vanilla essence and orange rind.
- Mix all dry ingredients and fold through the butter mixture until well combined.
- Mix through the raisins with the water they were boiled in. Stir thoroughly.
- Place spoonful of mix onto prepared baking trays.
- Bake in oven for 10-15 minutes or until cooked through and lightly coloured.
