Lime and Coconut Jellies

Ingredients

  • 85 g Aeroplane Jelly Lime
  • 200 ml boiling water
  • 1 cup lite coconut milk
  • 1/2 honey dew melon
  • Toasted coconut to serve (optional)

Method

  1. Combine the Aeroplane Original Lime Jelly Crystals with boiling water and whisk until dissolved. Allow to cool to an egg white consistency. Gradually add in coconut milk and keep whisking until combined.
  2. Pour coconut jelly into 4 moulds, or 4 serving glasses and allow to set
  3. Using a melon baller, scoop out melon flesh (or alternately dice). When jelly is set, turn out to serve, or just top in the glasses with melon balls. Sprinkle with toasted coconut to serve.
