Ingredients
  • 1½ cups (375ml) milk
  • 1 egg
  • 2 tsp vanilla extract
  • 2 cups self-raising flour
  • 1/4 tsp bicarbonate soda
  • 1/3 cup caster sugar plus 1 tbsp extra
  • 1 tsp
  • 1½ cups blueberries (fresh or frozen)
  • 25 g butter, cubed
  • 1 punnet (250g) strawberries, hulled and halved
  • 1 tbsp McCormick Cinnamon Ground
  • 1 cup double thick cream
Directions
  1. In a large bowl add milk, egg, vanilla, flour, bicarbonate of soda, caster sugar and McCormick Cloves Ground. Whisk until just combined and then stir in the blueberries.
  2. Heat a large frying over medium heat and add a cube of butter. Then using ¼ cup mixture per pancake, cook 2-3 pancakes at a time for 2 minutes or until bubbles appear on surface and turn and cook for another 2 minutes or until cooked through.
  3. Transfer to a plate and cover loosely with foil to keep warm, repeat with the remaining mixture.
  4. In a small bowl add strawberries, 1 tbsp caster sugar and McCormick Cinnamon Ground then mix well.
  5. Serve warm pancakes with cinnamon strawberries and cream.
