Chermoula Chicken

Ingredients

  • 2 tbsp Moroccan
  • 4 chicken breast fillets
  • 1 tsp olive oil
  • 200 g couscous, made to pack instructions
  • 1 cup mixed dried fruit
  • 1 cup frozen peas
  • 1/2 cup slivered almonds

Method

  1. Combine MCCORMICK Moroccan Mild Chermoula Blend, chicken and olive oil in a bag and shake to coat chicken. Remove from bag.
  2. Preheat oven to 180°C
  3. Heat a large frying pan and panfry chicken until browned on both sides.
  4. Remove from pan and place chicken on a baking tray and place in a preheated oven for 20 minutes.
  5. While chicken is baking, toss couscous into a hot pan with remaining ingredients, stir fry for 10 minutes, tossing well.
  6. Remove chicken from oven, slice thickly and serve with cous cous.
