Coconut Lime and Ginger Chicken Parcels

Ingredients

  • 4 chicken breast fillets, each sliced into thirds
  • 1 cup green beans, sliced
  • 3/4 cup desiccated coconut
  • juice of 2 limes
  • 1 1/2 tbsp MCCORMICK Lemongrass, Lime and Ginger Seasoning
  • 1 tbsp brown sugar
  • 1 large banana leaf*, cut into 4 pieces
  • 4 (20cm x 20cm) squares of aluminum foil

Method

  1. Pre heat oven to 200oC. Combine the first 6 ingredients in a large mixing bowl.
  2. Lay the banana leaf pieces on top of the foil squares and divide the chicken mixture evenly to top the banana leaves. Wrap tightly in the leaves and foil.
  3. Place on oven tray and bake for 25 - 30 minutes.
  4. Serve with rice or salad * if banana leaves are unavailable, use baking paper with the foil instead.
