Lime and Chili Fish Cakes

Ingredients

  • 4 x 600 g potatoes, peeled, boiled and mashed
  • 1 tbsp Lime and Chilli
  • juice and rind of 1 lime
  • 450 g can Salmon or tuna, drained and flaked
  • 1 egg
  • 1 small leek, washed and diced
  • 1 tbsp butter
  • 1 cup dried breadcrumbs
  • oil for frying

Method

  1. Place mashed potatoes in a large mixing bowl, and combine with Lime & Chili blend, lime, salmon and egg.
  2. Pan fry the leeks in butter, and toss into the potato mix.
  3. Form the mixture into 8 large patties, then press into the breadcrumbs.
  4. Heat oil, and shallow fry the patties for 5 minutes each side, until golden brown.
  5. Serve hot, on a bed of steamed greens
