Perfect Scrambled Eggs with Cracked Pepper

Ingredients

Method

  1. In a large bowl, whisk the eggs together with cream and then season with a little salt and pepper.
  2. Heat a non-stick pan and fry bacon rashers for 3 minutes. Turn these over, add the tomatoes and panfry a further 3 minutes. Remove these from the pan, and keep warm.
  3. Add the butter to the pan, allow to melt then pour in the egg mixture. Allow eggs to begin to set, then push the set egg from the outer edges into the centre of the pan. It is important to move the eggs slowly, and not be too vigorous, as the more you stir them, the tougher they will get.
  4. When the eggs have almost completely set, remove from the heat, and divide between two plates.
  5. Serve with tomatoes, bacon and toast, then top with an additional grind of black pepper.
