Rack of Lamb with Crushed Herbs Rub

Ingredients

  • 4 medium potatoes, peeled and halved
  • 2 x 8 chop racks of lamb, trimmed
  • 1/2 tbsp olive oil
  • 2 tbsp Roast Rubs Crushed
  • 1 large red capsicum, roasted and peeled
  • 1 cup semi dried tomatoes
  • 150 g bag rocket leaves or baby spinach
  • 2 cups frozen peas, cooked

Method

  1. Preheat oven to 200oC.
  2. Par cook the potatoes in the microwave oven for 15 minutes on high, or simmer for 15 minutes. Drain and set aside. Rub the lamb racks with half the olive oil, then press the MCCORMICK Roast Rub with crushed Herbs into the racks, rubbing on well.
  3. Place the racks together so the bones intertwine. This will help them to stand up nicely while baking. In a large baking dish, place the racks with remaining oil and par cooked potatoes in at 200oC, then reduce the heat after 5 minutes to 170oC. Allow to cook for an additional 15 minutes. Remove from the oven, cover and allow to rest for 5 minutes.
  4. Prepare a serving platter, by slicing the roasted capsicum, then tossing this with the semi dried tomatoes and rocket leaves. Slice the racks, then place over the rocket mixture. Serve the potatoes and peas in a separate bowl.
