Seared Citrus Pork

Ingredients

  • 1/3 cup (2 – 3) fresh lime juice
  • 3/4 cup olive oil
  • 1 1/2 tbsp Lime and Chilli
  • 5cm piece fresh ginger, grated
  • 1/4 cup honey
  • 4 x 150 g loin of pork, trimmed
  • Roesti:
  • 500 g 2 cups par-boiled and grated potato, squeezed of moisture
  • 1 onion, finely diced
  • 1 egg
  • 2 tsp Lime and Chilli

Method

  1. Combine the fresh lime juice, ½ cup olive oil, 1 ½ tbsp seasoning, ginger and honey.
  2. Marinate the pork in this mixture while preparing the roesti.
  3. Combine the roesti ingredients, and form into palm sized fritters. Panfry for 3 – 4 minutes in remaining olive oil. Drain on absorbent paper.
  4. Panfry or barbeque the pork fillets for 5 minutes, then remove and serve pork and roesti with a bed of crunchy greens.
