Chicken Wrap

Ingredients

  • Mint yogurt:
  • 1 cup natural yogurt
  • 1 tbsp mint, finely chopped
  • 2 tbsp fresh lemon juice
  • Wraps:
  • 2 chicken breasts, sliced thickly
  • 1 large green capsicum, sliced (or use ½ a red and ½ a green capsicum)
  • 1 onion, sliced
  • 1 tbsp Keens Curry
  • 1 tbsp oil
  • 4 roti wraps (or use tortillas or mountain bread wraps)

Method

  1. Combine the mint yogurt ingredients together, then set aside until serving.
  2. In a large bowl toss the chicken strips, capsicum, onion, Keens Traditional Curry Powder and oil and coat well. In a large frying pan, fry the chicken and vegetables for 6 – 7 minutes, or until chicken is cooked through.
  3. Heat the wraps according to their pack instructions, then divide the chicken mix between the four wraps. Top each with some rocket, then dollop with yogurt. Wrap and serve.

    These are fantastic! Plus the added bonus of being quick and easy! My whole family loved them. I also added some mushrooms. Next time I'm going to try substituting the chicken with some lamb backstrap! I think it will go well here.YUM!!

    Excellent, we also made similar and use a Avocado spread instead of the Mint Yoghurt
