Red Lentil and Vegetable Dahl

Ingredients

  • 2 tbsp oil
  • 1 onions, sliced
  • 2 zucchini, grated
  • 1 tsp salt
  • 1 cup red lentils, washed and drained
  • 2 tbsp Keens Curry
  • 1 1/4 L vegetable stock
  • 1/2 cauliflower, cut in flowerets
  • 1 cup fresh coriander
  • Yoghurt and rice for serving

Method

  1. Heat oil in a large frying pan and fry the onions and zucchini with salt.
  2. Add lentils and Keens Traditional Curry Powder and fry for a further 3 minutes.
  3. Add in the stock and simmer for 45 minutes then add cauliflower and cook for a further 10 minutes.
  4. Stir through the coriander and serve with rice and yoghurt.

    Excellent mild dahl - great for vegans too. Watch timing as easy to overcook the lentils.
