Breakfast Piadina, with prosciutto, mustard and fried egg

Ingredients

  • mustard mayonnaise
  • 2 tbsp Keens Mustard Powder
  • 1 tbsp water
  • 1/4 cup mayonnaise
  • 500 g plain flour
  • 3 tsp baking powder
  • 2 tsp salt
  • 1 tbsp Keens Mustard Powder
  • 1 1/4 cups water
  • 1/4 cup olive oil
  • 12 slices of smoked ham/prosciutto
  • 6 fried eggs
  • 3 cups rocket

Method

  1. 1. In a bowl mix together the mustard mayonnaise ingredients.
  2. 2. Mix together all the dry ingredients for the dough.
  3. 3. Make a well and add the oil, water and knead for 10 minutes into soft dough.
  4. 4. Rest covered for one hour in room temperature.
  5. 5. Divide the dough into six balls and roll each ball out into circles 5-mm thick, dock with a fork to ensure the dough does not to puff while cooking.
  6. 6. Heat a non-stock fry pan and fry each piece on each side for 3-4 minutes until golden
  7. 7. Spread each Piadina with mayonnaise, top with ham/prosciutto, rocket and a fried egg.
