Caramelised Onion and Mustard Relish

Ingredients

  • 1/3 cup olive oil
  • 1 kg medium brown onions, peeled and sliced
  • 1 cup brown sugar
  • 2 tsp Keens Mustard
  • 1 tbsp mustard seeds
  • 1 cup red wine vinegar
  • Salt and pepper to taste

Method

  1. Heat oil in a large pan and cook onions over a low heat for 30 minutes until caramelised. Add all other ingredients and cook for a further 15 minutes.
  2. Place relish into sterilised jars and serve with steaks, crispy roasted chicken or salmon cutlets.
