Ham Zucchini and Mushroom Fritters

Ingredients

  • 100 g sliced leg ham
  • 2 small zucchinis, grated
  • 100 g spinach, wilted
  • 1 bunch chives, chopped
  • 1/2 cup Parmesan cheese, grated
  • 1 tbsp Keens Mustard
  • 3 tbsp flour
  • 1 egg
  • 1 tbsp Worcestershire sauce
  • 6xLg or 12xMed field mushrooms

Method

  1. Mix ham, zucchini, spinach, chives, Parmesan cheese, mustard, flour, egg and Worcestershire sauce together.
  2. Spoon mixture into mushrooms and bake in a 200c oven for 20 minutes. Let cool for 10 minutes before serving.
  3. Serve warm with a fresh garden salad
