Keens Shredded Chicken Salad with Mustard Vinaigrette

Ingredients

  • 2 cups shredded roast chicken
  • 4 cups butter lettuce, torn
  • 1/2 cup walnuts
  • 1 pear, sliced
  • 2 tsp Keens Mustard
  • 4 tbsp white wine vinegar
  • 4 tbsp olive oil
  • 1 tbsp fresh chives, chopped
  • cracked pepper to taste

Method

  1. Mix together the chicken and butter lettuce and divide into 4 salad bowls or plates then top each salad with walnuts and sliced pear.
  2. Combine Keen’s Mustard Powder, white wine vinegar, olive oil and fresh chives.
  3. Drizzle salad dressing over each salad. Season and serve.
