Rare Roast Beef with Garlic Aioli

Ingredients

  • 750 g Beef Eye Fillet
  • 2 tsp Keens Mustard
  • Salt and pepper to taste
  • 2 tsp olive oil
  • 1 head of garlic, roasted, peeled and mashed
  • 1 egg yolk
  • 2 tsp lemon juice
  • 1/2 cup light olive oil

Method

  1. Sprinkle the eye fillet with Keen’s Mustard Powder, salt, pepper and then rub with olive oil.
  2. Place in a hot 250c oven for 30 minutes or cook till your liking and let rest for ten minutes.
  3. Whisk the garlic, egg yolk and lemon juice together. Slowly add in oil whilst whisking until it forms a saucy mayonnaise (if to thick add a little warm water).
  4. Slice beef and layer all over a big platter then dollop or drizzle aioli over the beef. Serve with sprigs of watercress or rocket
