Herb and Parmesan Crusted Lamb Racks

Ingredients

Method

  1. Rub the butter into the breadcrumbs then mix in the onion, McCORMICK One Pot Home-Style Meatballs recipe base and egg into the crumb mixture.
  2. Press onto the top of the lamb leaving the bones un-crusted.
  3. Cover with foil and place into a 180oC oven for 30 minutes (removing the cover halfway through cooking) for medium cooked lamb or 40 minutes for well done lamb.
  4. Let rest for 10 minutes before slicing and serve with steamed green vegetables.

    This is a fabulously tasty meal, but I found the cooking time a little short,and had to increase it to 50 mins for medium cooked lamb, but obtained a very good result.
