Grilled Bush Tomato and Smoked Cheese Bruschetta

Ingredients

  • 8 slices of good quality sour dough bread
  • 8 small tomatoes, trimmed and cut in half
  • 1/2 red onion, finely diced
  • 200 g smoked cheddar cheese
  • 1 tbsp Grill Mates Bush Lamb
  • 1 tbsp good quality olive oil
  • 16 leaves fresh basil for serving

Method

  1. Toast the bread under the griller on one side and then set aside.
  2. Place the tomatoes on the grilling tray and scatter with red onion. Top the tomatoes with cheese and sprinkle liberally with McCORMICK Grill Mates Bush Lamb.
  3. Place the tray under the griller and melt the cheese. Lightly sprinkle the untoasted side of the bread with olive oil.
  4. Place the grilled tomatoes and cheese on the top of the bread then decorate with basil leaves and serve.
