How to Choose a Pot for One Pot Cooking
When selecting a pot or dish in which to cook your one-pot recipe, remember that certain pots are better suited to cooking on a low heat for a long time.
Stockpot: Usually made from aluminium, copper, cast iron or stainless steel, a stockpot is a large, tall pot with handles and a lid. Stockpots vary in size, and can be used for small family meals, or larger batches for a crowd, or to be frozen. Quality is important when buying a stockpot, so look for a sturdy, solid design, a thick, heavy base to prevent burning and a well fitting lid to seal in heat and moisture.
Casserole Dish: Usually made from glass, ceramic or earthenware, a casserole dish is a deep ovenproof dish with 2 handles and a tight-fitting lid. Typically, a casserole dish is filled with ingredients that have first been browned, and then placed in the oven over a length of time. For stovetop cooking, look for a casserole dish made from flameproof material, as ordinary casseroles are not designed to withstand direct heat.
