Reindeer Cake with Cream Cheese Icing

Ingredients

1 cup olive oil
1 cup brown sugar, firmly packed
3 eggs
1 ½ cups plain flour
3 tsp baking powder
1 tsp bi-carbonate of soda
2 tsp MCCORMICK Nutmeg
2 tsp MCCORMICK Mixed Spice
2 cups carrot, grated
¾ cup walnuts, chopped
250g cream cheese
½ lemon, juiced
100g icing sugar
¾ cup shredded coconut

Direction

Line an 18x18cm cake tin with baking paper. In a large mixing bowl
Mix together oil, brown sugar and eggs. Sift in flour baking powder, bi-carbonate of soda, MCCORMICK Nutmeg and MCCORMICK Mixed Spice then mix until smooth. Fold carrots and walnuts into the batter. Pour the cake batter into the lined tin and place in a pre heated oven (180c) for 45 minutes or until cooked. Let cool.
Blend cream cheese, lemon juice and icing sugar together in a food processor until smooth.
Spread the reindeer cake with cream cheese icing and sprinkle with shredded coconut topped with Santa’s reindeers.
