Lemon Lamb Cutlets with Haloumi

Ingredients

4 potatoes, sliced 2cm thick
12 lamb cutlets
200g Haloumi cheese, sliced thickly
1 tbsp olive oil
3 tsp McCormick Lemon, Basil & Thyme
2 cups baby greens (rocket, spinach, cress)
½ bunch chopped fresh basil
juice and zest of 1 lemon

Direction

1.On a very hot grill plate, char grill potato slices, lamb and Haloumi for 7 - 8 minutes each side. Remove from the grill plate and keep warm.
2.Combine oil and McCormick Lemon, Basil & Thyme then toss with the cooked potato slices, lamb and Haloumi. Arrange onto four serving plates with baby greens, then top with basil and lemon. Serve warm.
