Fresh Lemon Herb and Ricotta Pasta
Ingredients
400g spaghetti
200g ricotta cheese, crumbled
1 tbsp McCormick Lemon, Basil and Thyme
1 red or green chili, seeded and finely diced
juice and zest of 1 lemon
½ cup fresh, chopped parsley
50g toasted pine nuts
Direction
1.Cook spaghetti in boiling salted water until al dente.
2.While spaghetti is cooking, combine the remaining ingredients in a large mixing bowl. Drain the spaghetti, and toss into the combined ingredients. Mix well then divide between four bowls and serve.
