Seared Citrus Pork

Ingredients

1/3 cup (2-3) fresh lime juice
¾ cup olive oil
1½ tbsp McCormick Lime & Chili Blend
5cm piece fresh ginger, grated
¼ cup honey
4 x 150g loin of pork, trimmed

Roesti:
500g (2 cups) par-boiled and grated potato, squeezed of moisture
1 onion, finely diced
1 egg
2 tsp McCormick Lime & Chili Blend

 

Direction

1.Combine the fresh lime juice, ½ cup olive oil, 1 ½ tbsp McCormick Lime & Chili Blend, ginger and honey.
2.Marinate the pork in this mixture while preparing the roesti.
3.Combine the roesti ingredients, and form into palm sized fritters. Panfry for 3 - 4 minutes in remaining olive oil. Drain on absorbent paper.
4.Panfry or barbeque the pork fillets for 5 minutes, then remove and serve pork and roesti with a bed of crunchy greens
