Lime and Chilli Fish Cakes

Ingredients

4 medium (600g) potatoes, peeled, boiled and mashed
1 tbsp McCormick Lime & Chili Blend
Juice and rind of 1 lime
1 x 450g can salmon or tuna, drained and flaked
1 egg
1 small leek, washed and diced
1 tbsp butter
1 cup dried breadcrumbs
Oil for frying

Direction

1.Place mashed potatoes in a large mixing bowl, and combine with McCormick Lime & Chili Blend, lime juice and rind, salmon and egg.
2.Pan fry the leeks in butter, and toss into the potato mix.
3.Form the mixture into 8 large patties, then press into the breadcrumbs.
4.Heat oil, and shallow fry the patties for 5 minutes each side, until golden brown.
5.Serve hot, on a bed of steamed greens.
