Hot Caramel Baked Apples

Ingredients

4-6 Granny Smith apples, peeled and cored
½ cup ricotta cheese
½ cup Chillian Flame raisins (found in dried fruit section of supermarkets)
1 tbsp rum or brandy
½ tsp McCormick Cinnamon Ground
½ cup brown sugar
1 tsp McCormick Mixed Spice
50g butter
1 ½ cups water

Direction

1.Pre-heat Oven to 180ºC
2.Place the prepared apples into an ovenproof baking dish.
3.Fill the centres with combined ricotta cheese, raisins, rum and McCormick Cinnamon Ground.
4.Blend the brown sugar and McCormick Mixed Spice together with the butter and water in a small saucepan and bring to the boil.
5.Pour mixture over the apples and cover. Bake in the preheated oven for 1 ¼ hours basting frequently. Serve warm with heavy cream, custard or vanilla ice cream.
