Szechuan Peppered Chicken

Ingredients

1 tbsp olive oil
1 tbsp soy sauce
1 tbsp Chinese BBQ sauce
1 tbsp McCormick Pepper Steak Seasoning
2 large chicken breasts, sliced into stir fry strips
2 onions, sliced into strips
3 cups Asian greens (bok choy, snow peas, spring onions), cut into bite sized pieces

Direction

1.Combine the first 4 ingredients and mix well.
2.Add the chicken and allow to sit for 2 - 3 minutes.
3.Drain chicken from the marinade, and reserve.
4.Stir fry the chicken and onion until golden brown. (this is best done in small batches to prevent the chicken from toughening).
5.Remove from the pan, then add the greens and reserved marinade. Toss for two minutes then add back in the chicken and onion. Serve on a bed of steamed rice.
