Roasted Fennel and Flathead Salad

Ingredients

1 large bulb fennel, sliced
1 Spanish onion, sliced
3 - 4 cups rocket
8 filleted flathead tails
25g butter
¼ cup lemon juice
1 tbsp olive oil
2 tsp cracked black pepper
4 sprigs fresh thyme
2 tbsp McCormick Simply Seafood Tartare sauce

 

Direction

1.Roast or chargrill the fennel slices and Spanish onion until crispy (about 15 minutes).
2.Toss these with the rocket and place on a large serving plate.
3.Panfry the flathead tails in the butter 3 minutes each side, then place over the salad.
4.Combine the lemon juice, olive oil, black pepper and thyme and drizzle over the salad.
5.Serve with a generous dollop of McCormick Simply Seafood Tartare Sauce.
