Lamb Leg with Baby Potatoes
Ingredients
1 x 1.5kg Leg of Lamb
1 x 800g can Crushed Tomatoes
1 x 40g sachet McCormick Slow Cookers Garlic & Herb Lamb Shanks
1 tbs Worcestershire Sauce
12 Baby Potatoes
Direction
1.Fry lamb in a hot pan to brown and seal. Place into the slow cooker dish.
2.Combine the crushed tomatoes and McCormick Slow Cookers Garlic & Herb Lamb Shanks sachet and Worcestershire sauce, pour over the lamb.
3.Add in the baby potatoes and cover. Cook on LOW for 8 hours.
Hints
If using a very large or wide slow cooker, or if the lid is not very snug, you may need to add up to ½ cup of extra liquid stirred through during, or at the end of the cooking time. This will not be the case for the small and medium cookers, as they will turn out as per the instructions.
Some brands cook at a higher heat intensity than others. We have timed our results on a Breville Advance Meal Maker 3L, however if you are using a brand such as Tiffany or Kambrook, or an older crock-pot you may need to increase the liquid slightly. A good guide to look at is often the cookbook that accompanies your cooker.
e.g. If a common timing for beef is 3 hours on HIGH, then reduce our cooking time to match.
Slow cooking is perfect for tougher cuts of meat which are often cheaper but have great flavours. Look for blade steak, shoulder, shanks, leg meat and either dice or use in large chunks. Slow Cooking also suits whole joints, such as a boned out lamb leg or pork shoulder, but trim the fat well before adding to the cooker.
Slow cooking requires quite a bit of time to get going, so if you cut your cooking time short (i.e. cook for only 1 - 1 ½ hours) you will find the sauce is very thick, and the meat will possibly still be tough. We have based the end result on a 4 hour cook time, which allows for the moisture in the meat and vegetables to be released and form the sauce in the perfect consistency.
Freezing is a perfect fit for slow cooked meals, and left over's can remain frozen for up to 3 months.
Place the meat from the stews and casseroles into small oven proof dishes and top with mashed potato or pastry. Alternately, use any leftovers to top pasta or serve with rice.
McCORMICK Slow Cookers provide great flavour bases, so try experimenting with different cuts of meat, or adding different vegetables. Root vegetables, capsicums and tomatoes work really well, and adding some fresh herbs or a bit of citrus zest to finish provide light and flavoursome top notes to the dish.
