Place pork in large resealable plastic bag. Add marinade, then toss to coat, marinate in refrigerator for 15 – 30 minutes.
Remove pork from marinade. Discard any remaining liquid. Thread marinated pork, red capsicum and pineapple alternatively onto skewers.
Grill over medium heat 8-10 minutes or until pork is desired doneness and pineapple and capsicums are charred, turning occasionally. Serve with a rice salad, if desired.
