Buttermilk & Chipotle Chicken Strip Wraps

Ingredients
  • Chicken Strips
  • 1/2 cup (125 mL) buttermilk
  • 1 x 40 g sachet McCormick Grill Mates Chipotle and Roasted Garlic Dry Marinade
  • 8 (500 g) chicken tenders
  • Crisp Salad
  • 1/3 cup (80 mL) mayonnaise
  • 2 spring onion, thinly sliced
  • 1/2 baby cos lettuce, trimmed, coarsely chopped or torn
  • 2 celery stalks, trimmed, thinly sliced
  • 1/3 cup (40 g) walnut halves, roughly chopped
  • To Serve
  • 4 wraps
  • mayonnaise
Directions
  1. Place buttermilk and McCormick Grill Mates Chipotle & Roasted Garlic Dry Marinade in a medium bowl and stir to combine. Add chicken tenders and toss to coat and set aside.
  2. Toss salad ingredients in a medium bowl and set aside.
  3. Preheat a lightly greased BBQ grill plate or frying pan to medium heat, lift chicken strips from buttermilk and allow excess to drip off.
  4. Cook chicken strips for 3-5 minutes each side or until cooked through. Cover to keep warm.
  5. Top each wrap with a generous serve of salad, mayonnaise and 2 tenders. Roll up tightly and serve.
Recipe Tip

Substitute the tenders with a whole butterflied chicken and BBQ for 15-20 minutes each side or until cooked through. Serve with the crispy salad and grilled wraps on the side.
