Soy Pepper Chicken with Crushed Cashews

Ingredients
  • 1 tbsp
  • 1 tsp sesame oil
  • 1 tbsp light soy sauce (less salt)
  • 500 g chicken thigh fillets, cubed
  • 1 tsp oil
  • 150 g sugar snap peas, trimmed
  • 1 bunch brocolini, trimmed
  • ¼ cup cashews, crushed
Directions
  1. Mix together the McCormick Grill Mates Blazin’ Pepper Seasoning, sesame oil, light soy sauce and cubed chicken.
  2. Heat oil in a large frying pan or wok and pan fry the chicken for 5-10 minutes.
  3. Add in the sugar snap peas and the brocolini with one tablespoon of water.
  4. Cover and cook for a further 3 minutes then serve immediately.
