Ingredients
  • ¾ cup (180 mL) water
  • 1 tsp vanilla extract
  • ⅓ cup (66 g) caster sugar
  • 1 tsp McCormick Cinnamon Ground
  • 1 tbsp instant coffee granules
  • pinch salt
  • ⅛ tsp (a pinch extra to serve) KEEN’S Chilli Blend
  • 100 g dark chocolate, the best quality possible, grated
  • 2 cups (500 mL) full cream milk
  • Vanilla ice cream or whipped cream
Directions
  1. Place water in a small saucepan over medium heat and bring to a boil. Add vanilla, sugar, McCormick Cinnamon Ground, coffee granules, salt and KEEN’S Chilli Blend. Stir to combine and simmer for 1 minute, then add grated chocolate. Whisk until mixture thickens, slowly add milk and simmer for a further minute or until hot.
  2. Serve immediately, pouring evenly between 4 serving cups (allow room for ice cream) top with a scoop of vanilla ice cream or dollop of cream and a light dusting of chili powder.
Recipe Tip

You can prepare this ahead of time (before ice cream or cream is added) and reheat. Be sure to whisk well with a balloon whisk to make it light and foamy before serving.
