Ingredients
  • Prawns
  • 1 tbsp KEEN'S Traditional Curry Powder
  • 50 g butter
  • 12 large green prawns, shells on*
  • Salad
  • 1 small cucumber, diced
  • 3 stalks celery, diced
  • 1 avocado, diced
  • 1 tbsp lemon juice
  • 1/4 cup coriander
Directions
  1. Combine the KEEN’S curry powder and butter together to form a smooth paste.
  2. Using a sharp knife, split the prawns down the back through the shell. Remove the vein and split wide open (like they are butterflied). Spread each prawn with some of the curry butter.
  3. Combine all of the other ingredients and divide between serving plates. BBQ or pan fry the prawns for 1-2 minutes each side, then serve with the salad.
Recipe Tip

Leaving the shells on helps the prawns cook in the butter on a BBQ plate. As an alternative you can use shelled green prawns. Just cook them in a small pan to retain the curry butter.
