In a large sealable plastic container, place chicken, lime or lemon juice, rum, soy sauce, McCormick Thyme Leaves, Chilli Flakes and sugar season well with McCormick Sea Salt and Black Pepper, toss to coat well. Cover and marinate overnight in the refrigerator.
Preheat oven to 200°C (180°C fan forced). Place chicken in a large baking paper lined baking dish. Bake chicken, turning occasionally and basting with marinade, for 40 minutes or until tender and cooked through.
Place chicken onto a serving platter with corn and bean salad and rice.
Do not worry about the alcohol in the rum as the alcohol will be cooked out while chicken is baking.
