Beef Scallopine with Mushrooms

2 tbsp plain flour
1 tsp salt
1/2 tsp ground black pepper
500 g beef or veal minute steaks
2 tsp oil
1 red onion, peeled and thickly sliced
200 g mushrooms, sliced
200 ml cream

1 tsp Paprika
1 tsp Garlic granules
1 tsp Sage leaves
1/2 tsp Rosemary leaves
1 tsp Thyme leaves
1 tsp Oregano leaves
Steamed baby potatoes and beans
Combine flour, Paprika, salt and pepper in a bowl. Add beef and coat in seasoned flour and set aside.
Heat oil in a large frying pan on medium – high heat and brown beef for 1 minute each side. Remove from pan and set aside.
Add red onion and mushrooms to pan and cook 3-4 minutes. Add 1/4 cup water, Garlic, remaining herbs, cream and stir gently.
Bring to a simmer and cook for 10 minutes or until sauce thickens.
Return beef to the pan and warm through with the sauce.
Serve with boiled baby potatoes and steamed beans.
