Black Eyed Pea Fritters with Guacamole

  1. To make the fritters; drain and rinse peas, place into a food processor with egg, onion, McCormick Garlic Powder, Cayenne Pepper, salt and season well with McCormick Black Pepper. Blend until a fine paste forms, scraping down the sides occasionally.
  2. Heat oil in a large saucepan to high heat (180°C) and drop heaped tablespoon size balls of fritter mixture into hot oil in batches. Cook for 5 minutes, turning occasionally, until they are golden and cooked through. Remove and drain on paper towel.
  3. To make the Guacamole; in a medium bowl smash avocado together with McCormick Cumin Ground, Coriander Ground, Chilli Flakes and the zest and juice of limes.
  4. Serve fritters with guacamole.
Recipe Tip

These fritters would be a great breakfast menu addition, include a side of crisp bacon!
