  1. Heat oil in a large, heavy-based saucepan over medium heat.
  2. Season lamb shanks well with McCormick Sea Salt and Black Pepper. Cook shanks for 5 – 8 minutes, turning occasionally, until evenly browned.
  3. Add onion, tomatoes, McCormick Middle Eastern Spices (Harissa), stock, olives, lemon and orange slices. Cover and simmer for 2-3 hours until lamb is tender.
  4. Serve with mint and parsley over couscous.
Recipe Tip

You can substitute shanks with a small leg of lamb, and cook in an oven proof casserole dish transfer to a 140˚C (120˚C fan forced) oven, for 5-7 hours, or until meat is fall apart tender.
