Place pork mince in a medium, non-metallic bowl. Add all remaining ingredients and use your hands to massage mixture well, cover and refrigerate until ready to cook.
To cook, heat a little oil in medium frying pan over medium heat. Break up chorizo into bite sized pieces and add to the hot pan. Allow to cook for 3 -5 minutes do not stir too often, allow mince to brown before tossing and repeating.
Serve with the chilli tomato beans and fried eggs.
