Rice-a-Riso Chicken & Cashew Nuts

1 tbsp (20 mL) oil
2 skinless chicken breasts, roughly chopped
1 x 180 g packet
2 cups (500 mL) of water
1 red capsicum, diced
1 bunch bok choy, sliced
2 cups beans shoots
50 g roasted cashew nuts (unsalted)
Spring onions to garnish
Heat oil is a large deep sided frying pan and brown chicken well.
Add Rice-a-Riso packet contents and seasoning sachet contents to the pan and cook for 1 minute. Pour in the water and simmer for 10 minutes.
Stir in the capsicum, bok choy, been shoots and cashew nuts and heat through for 2-3 minutes.
Serve hot, garnished with sliced spring onions.
