Ingredients
  • 1 tbsp (20 mL) oil
  • 2 skinless chicken breasts, roughly chopped
  • 1 x 180 g packet Rice-a-Riso Chicken Flavoured
  • 2 cups (500 mL) of water
  • 1 red capsicum, diced
  • 1 bunch bok choy, sliced
  • 2 cups beans shoots
  • 50 g roasted cashew nuts (unsalted)
  • Spring onions to garnish
Directions
  1. Heat oil is a large deep sided frying pan and brown chicken well.
  2. Add Rice-a-Riso packet contents and seasoning sachet contents to the pan and cook for 1 minute. Pour in the water and simmer for 10 minutes.
  3. Stir in the capsicum, bok choy, been shoots and cashew nuts and heat through for 2-3 minutes.
  4. Serve hot, garnished with sliced spring onions.
