Ingredients
  • Slaw
  • 2 cups purple cabbage, shredded
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • Fried Chicken
  • ½ cup plain flour
  • 1 x 25 g packet McCormick Southern Style Street Food
  • 1 egg
  • 2 x large chicken breasts
  • Cooking spray
  • Honey Mustard Mayo
  • ⅓ cups mayonnaise
  • 1 tbsp honey
  • 3 tbsp Dijon mustard
  • To serve
  • 4 x brioche burger buns, halved
  • Sliced pickles
Directions
  1. Add all slaw ingredients to a large bowl and toss to combine. Cover and set aside in the fridge.
  2. Preheat the air fryer to 200°C. In a shallow bowl, combine the McCormick Southern Style Street Food seasoning and plain flour. In a second shallow bowl, whisk the egg with a fork.
  3. Butterfly the chicken breasts so that you have 2 large pieces that are roughly 1cm thick throughout. Coat each chicken breast in the flour mixture, followed by the egg and then back into the flour mixture again. Shake off excess flour and lightly spray with cooking oil all over.
  4. Place the breasts into the bottom of the air fryer basket and cook for 25 minutes, flipping halfway.
  5. Meanwhile, whisk together all the honey mustard mayo ingredients together in a small bowl. Set aside.
  6. Toast the burger buns then add a light layer of the honey mustard sauce. Divide the slaw between each burger then top with a half a fried chicken breast each and sliced pickles. Spread the remaining bun halves with the remaining honey mustard sauce and sandwich on top of the chicken.
