Caribbean Wings & Roasted Pineapple Salsa

Ingredients
  • Roasted Pineapple Salsa
  • ½ fresh pineapple, skin removed
  • ½ red onion, finely diced
  • ½ lime, juiced
  • ⅓ bunch fresh coriander, leaves picked & torn
  • Wings
  • 3 tsp baking powder
  • 1 kg well dried chicken wings (wing tips removed)
  • 1 x 25 g sachet McCormick Caribbean Jerk Street Food
  • spray oil
  • To Serve
  • lime, sliced
  • fresh coriander leaves, extra
Directions
  1. To prepare salsa; slice pineapple into four lengthwise and remove core section.
  2. Pre heat air fryer to 200°C. Air fry pineapple for 10 minutes or until charred. Allow to cool slightly then finely dice and place in a medium sized serving bowl with remaining salsa ingredients. Stir and set aside until ready to serve.
  3. To cook wings; sprinkle baking powder over wings and toss to coat. Then toss Caribbean Street Food Seasoning through wings to coat.
  4. Arrange wings in a single layer in air fryer - do not overcrowd cook in batches if necessary. Spray with oil and air fry for 15-18 minutes until golden and crispy.
  5. Serve with pineapple salsa, lime and coriander.
