Greek Salad Skewers
⅓ cup (80 g) Greek or natural yogurt
1 tbsp (20 mL) Extra Virgin olive oil
1 x 25 g sachet
McCormick Greek Style Street Food
1 x 250 g mini-Roma tomatoes, cut in half (optional)
1 x 250 g baby cucumbers, cut into 1.5 cm thick slices
100 g pitted calamata olives
100 g feta cheese, cut into 1cm cubes
Juice of 1 lemon
In a small bowl, mix the yogurt, olive oil and Greek Style Street Food Seasoning. Set aside.
On small cocktail skewers, skewer a tomato, followed by an olive, cucumber, and finish with a piece of feta, being careful not to crack the feta.
Mix the juice from the lemon with the yogurt dressing.
Place the skewers on a platter, drizzle generously with the yogurt dressing and serve with remaining dressing to the side.
This dressing can be used over salads, meats or even on a burger.
