500 g chicken breast fillet, cut into thick strips
2 ripe avocados roughly chopped
1 tomato deseeded and diced
8 x 8” tortilla wraps
150 g roasted capsicum, sliced
¼ of an iceberg lettuce, shredded
Combine half of the Mexican Street Food Seasoning, oil and chicken in a medium bowl.
In a second bowl mix the avocado, tomato and remaining half of the Mexican Street Food Seasoning.
Meanwhile pre-heat a large frying pan over a medium heat. Place tortilla in the frying pan, heat until char marks form (20 -30 sec). Repeat until all tortillas are done, cover and set aside to keep warm.
Add the chicken to the frying pan and cook for 3-4 minutes turning occasionally until cooked through.
Spoon the guacamole evenly down the centre of each tortilla. Arrange the roasted capsicum, lettuce and chicken evenly between tortillas, roll up and cut in half to serve.
