Ingredients
- 1 cup rocket leaves, washed
- 1 baby cos lettuce, washed
- 1 pear, thinly sliced
- 100 g cherry tomatoes, halved
- 100 g macadamia nuts, toasted and roughly chopped
- 1 tbsp fennel seeds
- 1 tbsp McCormick Rosemary Leaves
- 1 tbsp orange juice
- 1 tbsp cider vinegar
- 3 tbsp olive oil
- McCormick Adjustable Grinder Sea Salt
- McCormick Adjustable Grinder Black Peppercorns
- To serve:
- 1 tbsp fresh dill, roughly chopped
Directions
- Combine the rocket, cos, pear, macadamia nuts and tomatoes in a large bowl.
- Whisk together the Fennel Seeds, Rosemary Leaves, orange juice, vinegar and olive oil. Season to taste with McCormick Sea Salt and Black Pepper.
- Toss the dressing through the salad just prior to serving. Garnish with fresh dill.
